I am always (seriously, always) on the hunt for little tricks and hacks that will make my morning routine simpler and more streamlined. I lay out clothes for the week on Sunday afternoon, I make sure to wake up before my kids so I can start getting ready before I need to take care of them. I even prep all lunches so all we have to do is toss them into a lunchbox with a cold pack.
Time and time again, though, ya know what trips me up? The one thing I forget more than anything else? No matter how well-prepared I am in all other areas, the one thing that can make it all come crashing down? Breakfast.
That’s right, the most important meal of the day is the one I ALWAYS forget about until the last minute.
I have gone to work too many times without eating anything at all, and it just doesn’t end well for anyone involved.
When my kids came along, I found myself turning to store-bought breakfast bars because they are quick and easy, but I don’t like all the sugar and processed ingredients my kids get from them. (Don’t get me wrong - I definitely let my kids have sugar! I do try to make it count, though. If they’re going to eat it, they may as well be getting a cookie or ice cream out of the deal, not breakfast…)
In our house, breakfast recipes must be:
Easy to make in large batches
Healthy (have at the very least protein and fiber to fill us up)
Able to be frozen
Somewhat mess-free when eaten
Able to be eaten by my children without my assistance
I have found a few go-to’s that save my life regularly - recipes that I can make in large batches, freeze, and reheat super quickly in the morning - and I have even added a few more which I am going to try over the next couple weeks before school starts...
