On-The-Go Breakfast Bars & Muffins

You guys! You know those mornings when you know you should eat something healthy that will keep you full and give you energy for the whole morning? Sure, eggs exist, but so do donuts. And lemme tell ya - some days Mama just wants a stinking donut, ok?!?!

I found a solution to the breakfast problem - Kodiak Cake breakfast bars and muffins!

I just started making these bars and muffins earlier this year and they have been a game-changer! They are super quick to make, packed with protein from the Kodiak Cake mix, and easy to freeze & reheat. Plus, my kids love them!

When I first started making them, I did some experimenting with the original recipe found on the Kodiak Cake website.


My personal favorite is making these into bars with a special bar baking pan (check this one out). It makes the perfect size to grab and go!

If you are really looking for something to quench that donut thirst, try these on for size…

(FYI - the two recipes below are double-batches for freezing)

These wax paper bags are GREAT for freezing the muffins and bars!

Dark Chocolate Kodiak Cake Muffins

1 box Dark Chocolate Kodiak Cake mix

2 cups unsweetened Almond Milk (or any milk, really)

2 eggs

⅔ cup brown sugar

2 tsp. vanilla

*optional - mix in 1 cup or so fresh or frozen berries (raspberries are good!)

Mix all ingredients in a large bowl. Pour evenly into greased muffin pans (makes 24 muffins) or bar pans (makes 16 bars) and bake at 350 degrees for 17-20 minutes.

To freeze - wrap individually in wax or parchment paper, then freeze. Reheat for about 20-30 seconds in microwave before serving. Enjoy!

FUN FACT - I completely forgot to put eggs in the batch pictured here. Perhaps it was because a certain someone kept crawling onto the kitchen table… hmmm… Anyways, they turned out a little dense but still tasted good!

Strawberry Cinnamon Kodiak Cake Muffins

1 box Kodiak Cake mix

2 cups unsweetened Almond Milk (or any milk, really)

2 eggs

⅔ cup brown sugar

2 tsp vanilla extract

2 tsp cinnamon

1 cup chopped strawberries (fresh or frozen)

*you could really use any fruit you fancy! Strawberries just happen to be a crowd favorite around our house…

*I’ve also swapped ¼ cup mini chocolate chips for the berries when I was feeling cheeky...
